solution: pickle your chicken!

for one whole chicken:
put 2 liters of water in a pot, add 120 gram of salt, some thyme, rosemary, garlic, bay leafs, pepper, lemon juice, honey (or use whatever spices you feel like using) and bring that to a quick boil. let it cool off completely. submerge the chicken for 6-12 hours (maximum!) in the fridge.
after taking it out dry it with kitchen paper and let it rest for 1-2 hours. salt and pepper the the chicken. put it in the oven at 230 °C for ~40 minutes. turn off oven and let it rest for 15 minutes.

it's funny how a lot of salt can make transform chicken into the juiciest (and tastiest!) thing ever. i'll never again grill my chicken without pickling.
